Food – Dinner (SGMag) Tonight, how about a delicious Chicken Cacciatore recipe for dinner? You and your family will enjoy fresh mushrooms, a splash of white wine (or no for kids) and fine pasta that’ll make this wonderful Italian classic kids top choice for months to come. Let’s dive right in:
Chicken Cacciatore Ingredients:
1 Tbs. olive oil
6 small bone-in chicken pieces, about 2 1/2 lbs., skinned removed
1 pkg. (8.oz.) sliced fresh mushrooms
1 medium onion, sliced
1 clove garlic, finely chopped
1 can (14.5 oz.) no-salt-added tomato pasta
1/2 cup dry white wine (or no).
1 tsp. dried Italian seasoning
1/2 tsp. salt
1/8 tsp. pepper
6 oz. linguine or fettuccine
2 Tbs. small fresh basil leaves
Chicken Cacciatore Directions
- In a very large skillet, heat oil over medium heat. Add chicken; cook, turning occasionally , until browned on all sides. Remove chicken and set aside; reserve drippings in skillet.
- Add mushrooms, onion and garlic to drippings in skillet. Cook, stirring frequently, just until vegetables are tender, about 5 minutes. Return chicken to skillet.
- In medium bowl, stir together tomatoes, tomato paste, wine (or no wine), Italian seasoning, salt and pepper. Pour over chicken and vegetables. Heat to boiling; reduce heat. Cover; simmer 30-35 minutes, turning chicken once, until chicken juices run clear when thickest part is cut to bone, at least 165 degrees F.
- Meanwhile, cook fettuccine as packaged directed, leaving out salt and oil; drain. Serve fettuccine with chicken and sauce; sprinkle with basil.
